Vegetarian Curry vegetable

I should scream for joy
I love tofu

Yet as a practicing vegan
I am just quite paralyzed for what to eat

I had curry vegetable and fried noodles yesterday
At a Chinese restaurant

I cooked curry vegetable today

I bought ingredients two days ago
Since we have Deepavali (Indian New Year) celebration
We have three days holidays
Just have to cook those tofu


4 tbs curry powder, mixed with some water to make it a paste


1 cup shallot, diced
6 glove of garlics, diced
1″ ginger, diced
Or blend them in a blender
1/4 cup of diced candlenuts (option)

Brown for 1-2 mins and then turned and brown another 1-2 mins on low with 1/2 teaspoon of olive oil on a preheat Saladmaster 3 qt sauce pan
Add curry paste and cook for 1-2 mins






On medium heat, Add 1 cup of long beans, 1 cup of tofu, 1 eggplant, cut 1″, 1 cup cooked diced potatoes, 1 cup of water, put the cover on. When the vapo-valve click, put in on low and simmer for 15-20 mins or until tender. Add 1/2 cup of coconut milk or evaporate milk. Some salt and 1 Tbs lime juice. Serve with brown rice.
