Easy Salmon Dinner

Couscous is simple, heat 1/2 cup of water on a bowl in the microwave and pour in 1/2 cup of couscous. Put a small plate on cover for 5 mins. That it is.

Pan fried salmon and sprinkled some soy sauce.

Vegetarian Quesadilla

I just put one flour tortilla on the skillet on low, out some cheese, some hand mashed white bean, some sliced tomatoes, and some baby spinach and more cheese on half of the tortilla, fold and press and brown both side on medium heat.

Since I have the ingredients…cooked and tasted …yes…a quick and budget dish. Easy as well. My son suggests add some red pepper flakes. I used four cups of cooked rice.

I cooked my zucchini separate, I prefer them crunchy.
